Meringue Italienne with Forest Fruits Coulis


Steal the hearts of your guests with this easy-peasy, but o so delicious recipe for 4.


How to make the Meringue Italienne:

Ingredients:
200 g egg whites (eiwitten)
200 g granulated sugar (fijne kristalsuiker)
200 g powdered sugar (poedersuiker)
1 sachet of vanilla sugar (vanille suiker)
  1. Preheat oven to 100 ÂșC. Line a baking sheet with parchment paper. 
  2. Beat egg whites in a bowl until firm foam. Slowly add the granulated sugar. After 5 minutes also add the other two sugars. Keep beating until very firm (don't worry, this may take a while). 
  3. Spray the mixture on the baking sheet and let them dry in the oven for 2 to 2,5 hours. 
How to make the Forest Fruit Coulis:

Ingredients:
200 cl water
100 g granulated sugar (fijne kristalsuiker)
1 sachet of vanilla sugar (vanille suiker)
Raspberries (frambozen), strawberries (aardbeien), blackberries (bramen), blackcurrents (zwarte bessen)
little bit of lemon juice
  1. Boil the water. Add the granulated and vanilla sugar. Stir until all sugars have dissolved. 
  2. Add the forest fruits to the sugar water and boil for 5 minutes (keep a few behind for decoration). 
  3. Remove pan from stove and cool off. Once cooled off mash the mixture with a blender. Add a bit of lemon juice to your own taste.
Serve the Forest Fruits Coulis on a soup plate. Crumble the Meringue Italienne and add them to your coulis or you can serve one entire meringue per person. Add some fruits for decoration. Once on the plate, serve immediately.
